07.09.2005 :: Sometimes you just need to bake something!
This is my MaTante Gloria's recipe for Blueberry Cake.
YUM.
Blend together with mixer:
2 tblsp. soft butter
1 cup sugar
a pinch of salt
add 2 egg yolks (saving the whites in a clean bowl)
Mix well.
Add:
1 1/2 Cups all purpose flour
2/3 cup milk
mix well.
Beat 2 egg whites until stiff
Fold into batter
Pour 1/2 batter into greased 8x8 inch pan. pour on 3 cups (at least 1 pint) of washed blueberries, well drained. sprinkle with a bit of sugar and flour.
Lay on rest of batter.
Bake at 350 degrees F. 45 minutes until golden brown on top.
I always double the recipe and put into a 9 x 13 inch pan, using 2 pints of blueberries.

Do not, I repeat, do not eat this while knitting. Unless you are in the middle of some blueberry dyeing experiment. Then that's okay.

Thanks, Sandy. I'm cedrtainly going to print that one out: the local farm stand is brimming with blueberries and now I have a reason to submit to more than one towering pint of them!

Holy COW, that looks good! I made no-bake cookies last night, and I'm trying my best not to finish them ALL in one day. By mySELF. It's raining buckets here today and I keep flubbing up (censored for Sandy's blog) my FBS. Bleh. Better go have another no-bake.
