B is for Bethany, of course. Bethany is a wonderful young woman with infinite compassion for others, a great sense of humor and a will of steel. She was a breach baby and the nurse told me, NAY, warned me that she would be headstrong. Truer words were never said. I have confidence that nobody will ever push Bethany around. Ever. She is feisty. And stubborn and wonderful. And dedicated.
I admire her sheer will as she joined the ice hockey team, never having played hockey once in her life. She gets up of her own free will every weekday morning at 4:15 am, practicing her hockey padded bum off. Do not, however try to rouse her before noon on weekends. You've been warned!

Amazing me all along the way.
But that is not all.
B is also for Brussel Sprouts, cooked my favorite way, roasted!

I have long tried to love brussel sprouts, to no avail. I ate them boiled, steamed, stir fried, undercooked, overcooked. Blech. Until I tried this recipe from the Barefoot Contessa, coincidentally another B.
Oven Roasted Brussel Sprouts:
wash and trim ends of brussels, slicing in half if large
Put them in a roasting pan.
Sprinkle with olive oil
Sprinkle with salt
Roast in 350F oven for about 45 minutes until crispy and brown
Sprinkle more salt and pepper
Yum.
There you have it. B. One to eat and one to love. Please don't confuse the two!

Add a bit of fresh rosemary to your roasting sprouts - really good!

My child was sideways rather than breech. So, she's got the headstrong characteristics of a breech baby but the inclination to do it in a manner unlike anyone else ;>

Roasted beets are good too. After you take them out of the oven , sprinkle with a little balsamic vinegar. 4:15 AM! Yikes! I won't complain about getting up at 4:45 any more!

Great brussel sprouts recipe--thank you! I'm going to have to give it a try. Mmmmm. My sis in law fixes them with some sort of vinegar and maple syrup. They're pretty durned good. xoxoxo

Bethany's beautiful. Brussel sprouts are blech. My best friend loves them, though, so I find myself choking them down at her house, to be polite. I'll try roasting them. It's true that roasting makes many things taste better. (I never noticed how many adjectives begin with B - beautiful, blech, best, better - I wasn't even trying!)

Bethany is a beautiful girl. I think it is so great that she plays hockey. I always wished I could, but I'm a terrible skater. I didn't realize breech babies are suuposed to be headstrong. That explains a lot, actually. Both of my kids were breech, and my daughter is very headstrong.

Roasted brussels sprounts are the best, but I am one of those wackos who likes them no matter how they are cooked. The secret is cutting them in half, it gets rid of the bitterness.

Kudos to Bethany for being strong enough (in many ways) to start playing hockey.

Yay for Bethany, Boo for Brussel Sprouts. Just don't have a taste for them, yet. As I age I find I accept more things. Broccoli, Bagels. But I have always loved Bread, of any kind. Gee, I guess B really is the letter of the day.

I was a breach baby too, however my mom doesn't call me headstrong. She just claim's I've been a pain in her ass since birth.
Bethany's picture is beautiful, how can a mom not be proud.
