We love pickles. Especially Derek. He has been known to eat a whole jar of kosher dills by himself! When I read Carole's post about pickles, I had one of those FOREHEAD SMACK moments.
~Smack~ I could make pickles!
So I did. Refrigerator pickles.
Dill pickles
Loosely based on the recipe Carole used found at Coconut and Lime. (that linkage is getting long. Now, if you use that recipe, you have to say that Sandy saw it at Carole's who saw it at Coconut and Lime and so on and so on...)
My differences? I used apple cider vinegar because. I did not put mustard seeds or dill seeds because. I used only a couple of red pepper flakes. Again, because.
Today, it's all about the food.
One of my favorite things of summer
Ahhh. Corn. August to me is all about the corn. And the wonderful waning light. Getting dark earlier. Cooling off. Warm days, chilly evenings. (I can hope, can't I) But the corn. This is the month that we eat corn until we start to get sick of it. That is a challenge, though because I'm not sure I could be sick of it!
Pass the butter
No butter or salt for me, thank you. I'm a hardcore corn lover! Plain and plenty of it!
And oddly enough, I'm dreaming of jam too....

Fresh corn is wonderful! I love this time of year. Now if I could only find "white lightning" corn around here....

Wait...are just thinking of making jam or you are thinking of jam on corn.

Mmmm, sweet corn. I love it too. I don't think there are enough jars in my house to accommodate all the pickling, canning, jam I have planned.*sigh*

We test tasted a pickle on Friday and it was delicious. I know they're just going to get better and better. And corn. Sigh. It's one of my favorite things about summer. YummmM!

I haven't quite been able to bring myself to buy corn in Massachusetts, because I am from Iowa and I am a Corn Snob.

I would love to have the time to can some vegetables for the winter!!! I haven't done that in AGES!! I bought a Food Saver and since then there hasn't been any canning. A great thing to do with fresh corn is to shuck, place in a bag with some butter, seal it up, freeze until ready to eat, then pop the whole bag in boiling water!!! LOVE my Food Saver...well worth the money....but not nearly as satisfying as canning!!! Enjoy!! The pickles looks great!!

Ah, jam! Did you know you can process your fruit as far as the pulp stage (add nothing!) and freeze it as a block. When you have time, thaw it and treat it the same as fresh fruit. That is, add your sugar and pectin and go on with your jam making. This can be a life-saver when more than one fruit is ripe at the same time.

i just bought a dozen ears at our local greenhouse/veggie market today, and the name was white cadillac. and it was TASTY! hubby about had a fit when i told him i paid $5 for a dozen ears, but still. that's 3 meals of tasty corny goodness (i don't do salt, but man, i gotta have the butter. hubbie does butter, salt AND pepper. and tons of it. oy!)

Until I saw Carole's post, I didn't even realize that refrigerator pickles were possible! They look so good, too....
