11.20.2007 :: Tomorrow is for sealing
I am a happy camper today because I have the next 5 days off from work! Thanksgiving prep begins tonight. I am excited about it too. Why?

The one thorn in my side for Thanksgiving dinner is that most of it is a last minute strain, season and table. It makes too much commotion at the last minute and makes me uptight. If I could figure a way to do things ahead of time the day would be smoother.
So, here is my schedule:
TODAY~
~Make stock from previously roasted turkey wings for the gravy
~do the last of the shopping
TOMORROW
~Roast butternut squash, season and mash it, put in fridge
~cut up bread and season it for stuffing
~make cranberry conserve
~make homemade rolls (milk bread recipe from Joy Of Cooking pg. 746 if you have it) made into the traditional Hurley Thanksgiving shape of the knot roll. My Kitchen Aid Stand mixer makes this task a breeze!
~make the Sweet Potato Gratin and put in fridge *the recipe is Martha's but I cannot find it on the internets.
~go to the wine store and buy myself my new favorite wine, Elyse Nero Misto. Oh, and something for everyone too.
~Prepare the filling for the stuffed mushrooms (YUM! This is my favorite part of the day)
~ I can't finish this list. It is too long. I don't mind it when I am doing it, but writing it is exhausting me!)
THURSDAY
This is the part of the day that bugs me. Sure, the turkey is no big deal. But things like the potatoes and the butternut squash previously were last minute things. And the last thing you need is a bunch of needy, whiny last minute side dishes waiting to be drained and seasoned. And the dirty pans! OH! That's enough to drive a woman over the edge!
So.
(Okay, this is the important part. Stop skimming and start reading)
Today, a miracle happened. I was busy complaining to a work friend about hating the last minute things and he told me that he and his wife cook everything, MASHED POTATOES included and seal it with their Seal A Meal on the day before. Then on the day they take all of the sealed bags of ready to serve food and put them in a big pot of boiling water ala Banquet Bag meals of the 70's. He said that you will not be able to tell that the potatoes were made the day before. I'm picking on the potatoes because those are the hardest to reheat and serve with a straight face, right? He guarantees me that our meal will taste fresh and the bonus will be that there will be only a turkey pan to wash.
SOLD.
I am doing it.
Hmm. I got a seal a meal for Christmas about 3 years ago and have not used it once. I'd say it's about time then. Where did I even put it?

In the back closet, under books, the extra silverware drawer and god knows what else. Also, interestingly enough, right next to the wonderful fiber gifted to me by the lovely Kim back when I thought I might be a spinner. I was wrong. But seeing it there makes me happy.
I must get that seal a meal from under that stack and read up on the directions.
It's about time.
I'll let you know how this all goes. I am extraordinarily excited!

My favorite part is visiting with my Mom and listening to my kids talk with their grandparents. They groan about it before the grandparents get here, but then it's enjoyable and surprising to them. I may do that mashed potato thing! I love my Seal a Meal.

My favorite part of the meal? STUFFING -- always has been, always will be.
Favorite activity? Starting to watch those favorite romantic comedies and seasonal movies. Along with lots of wine and knitting!

My favorite part of the holiday? Watching the family get excited over two kinds of pie, cookies and a cake for dessert. MmmmmMMmm Cocoa Meringue Pie. I make it only for Thanksgiving and Christmas. And Scrabble marathons!

Before we dated, I spent thanksgiving with my family---now, we spend it with Dan's. In my house, it was taking down the good glasses and using them on the table. And pepperoni and sharp cheddar as an "appetizer" when we got home from the Melrose/Wakefield football game. MY favorite food is my nana's fudge... it was the first time of the "season" she would make it.
Favorite activity: bitching at my brothers! :) No, seriously, saying grace at the meal.

i have never hosted a thanksgiving (and i'm ok with that) so we never get leftovers. and that is what i miss most.
when i was a kid, we'd have turkey sandwiches with hellman's mayo on crusty bread.
sigh.

My favorite Thanksgivings are the ones I don't spend wit my family. I love them on Christmas, but for Thanksgiving my favorite time was eating chocolate crepes in Paris...

My husband is the cook year-round. For many years I worked on Thanksgiving and made it home just as dinner was served. A few years back my schedule changed, and I asked what I should do to help. My husband & sister, who have their 2-cooks-in-1-kitchen routine down to a science, assured me that my job was to look decorative. Thanksgiving is, hands down, my favorite holiday.

My favorite Thanksgiving things are - except for the food - all "used to be's" since too much change happened. Favorite activity: decorating (haven't done a bit of it this year). Favorite traditional food: whole berry cranberry sauce or maybe the squash, but then can't forget the mashed potatoes and gravy! Favorite look forward to thing: family all gathered together.

Oy...don't do the SAM for this meal! Just buck-up and make real mashed potatoes this time. Try the SAM at another time to see if your friend really is right. I never trust it when someone tells me "you can't tell the difference"! The connoisseurs of mashed in my family can tell the difference between Red Bliss and Yukon gold! God forbid I should try to pass off SAM potatoes! lol! Hope you have a happy one!

My favorite thing? stuffing! And mashed potatoes and gravy! And turkey! And homemade cranberry sauce. And the pies! Is that too many favorites?
Back when I used to cook the whole meal I always made the gravy about a month in advance. I'd buy wings and thighs and roast them to get stock and then I'd make the gravy and freeze it. Come Thanksgiving it was just reheat and serve. No pressure!

The thing I most look forward to is the smell of the turkey when it's cooking. My favorite thing to eat is the turkey. My favorite activity is sitting at the table after dinner has been served and cleaned up after. We talk, eat desserts and maybe play a game or two.

Do I have to pick just one? Silly me. Of course not.
- baking pies
- getting together with friends and family
- the table in its holiday finery
- all the great food
- playing card and board games with family and friends (dang, I wish you lived next door! that Boggle set would get a workout)
- five whole days off from work: there will be knitting
- being thankful for it all

My favorite traditional food is anything cranberry. Since we are bucking tradition this year, I'm going to have to figure out how to get the cranberries on the table. I know... I'll just put them there!
My favorite activity is watching football (or having it on as background noise if my favorite team isn't playing). I do also enjoy the cooking part.

My favorite thing is the leftovers. We make sandwiches with turkey, cranberry sauce, mayo and stuffing. All on squishy soft white bread. It's the only time of year we eat squishy white bread, but there is nothing better for those leftover sandwiches!

I can't choose just one! My favorite thing is the conglomeration of everything on my plate. I can happily eat the food all smushed (within limits) together. And I LOVE LEFTOVERS.
And I eat every single dessert. And I feel awful afterwards -- my stomach is like a lead balloon. But it tastes so good going down, I can't stop. And the best way to make it stop hurting? Eat some MORE. I kid you not. Well, I kid on the making-you-feel-better part, but that is always what I think is the truth at the moment. :)

My favorite part of Thanksgiving is going out to eat and the lack of left overs. I'm a heretic...but there you have it.

You are totally taking me back with the Banquet bag meals - mom can't/couldn't cook so dinner for the first 10 years of my life consisted of sliced turkey boil bags on rice. You now know my comfort food. ;o)
Perhaps I should get a seal thingy for next year...
