blueberry cake
Blueberry cake. Not just any blueberry cake, my Aunt Gloria's blueberry cake. It has been a staple in our family for my whole life. I pass the love of the cake onto my children.
My Aunt Gloria, or MaTante as we called her, was my favorite Aunt! Her and Uncle Joe both stood about 5 feet tall. They were poor as dirt. My cousins, Donna, Dennis and Donald all shared a bedroom. And I envied them so! I thought they were lucky. I'm sure they thought the same of me in my singularly occupied bedroom and in ground pool in the yard. Along with so many warm, fun memories of that family, I have this recipe. It is a hit wherever I bring it with the moist cake and abundant fruit filling.
MaTante's blueberry cake:
2 tablespoons soft butter
1 cup sugar
a little salt
Blend together
add 2 egg yolks (saving the whites in a separate bowl)
Beat all together good.
1 1/2 cups flour
2/3 cup milk (thanks, Cookie for pointing out my typo. It would be hard to add MILD to the mix!)
Mix well
In separate bowl, beat egg whites until stiff. Fold into rest of batter.
Put 1/2 of batter into 8x8 pan, sprayed with non stick cooking spray.
Pour at least 3 cups of blueberries over the top of batter. Fresh ones are great but frozen work well too. You'll never know they were frozen. Do not thaw them.
Sprinkle a bit of flour on the blueberries and a bit of sugar if you wish.
Put rest of batter on top. (This is hard to spread over so many blueberries so I skooch the batter to the edge of the bowl and pour it out in ribbons on top, covering it evenly)
Bake in 350 degree F oven for 45-50 minutes. Should be "good and brown" on top.
NOTE: I always always double this recipe and bake in a 13x9 pan, cooking for about an hour.

I love this receipe! Unofortunately i didnt have last summers blueberries left in the freezer, so i swapped them to apple and lingon berries. Since lingon berries are quite sour i added more sugar in there. Yammy, how well the combo worked with vanilla ice cream! Have to try next time the original version with blueberries:)

You do realize that blueberries are one of the two fruits I can eat on the Infernal Diet. (Pears are the other.) Thanks for the temptation.

I will have to add this to my list of baked goods. I like to try a new recipe every weekend. The cookies I tried last weekend didn't turn out so good, so hopefully your blueberry cake will redeem me!!

Delicious! I'm astounded that there are only 2 tablespoons of butter in the recipe - antioxidants galore, and a comparative calorie bargain! (BTW sometimes I take a yellow cake mix and throw blueberries in before I bake it - people invariably hound me for the recipe - I'll bet this one is sublime compared to a box!!)

Oh that just looks and sounds yummy! I have a recipe from my grandparents (which I haven't made) for blueberrie cake with lemon sauce, just reading the recipe makes me swoon!
