The lack of any knitting to speak of and the lack of new chin hairs to rant about, let's talk lunch!
What to do when you are hungry and don't want a sandwich or a bowl of cereal.

I whipped up some crab cakes for the first time today. I have always loved Crab cakes but thought they were hard to do! HA! I laugh! They are super easy.
Here's what I did:
I opened a can of crab, I used Bumble Bee Lump Crabmeat which has been hibernating in my cabinet for a while.
In a bowl with the crabmeat, I put about 1/4 cup of mayonnaise, 1 teaspoon of dijon mustard, salt, pepper, about 1/2 teaspoon of Old Bay Seasonings, a dash of cayenne pepper (I wanted to put tabasco sauce but I had none), a couple of splashes of Worcestershire Sauce, 1/2 cup of bread crumbs and 1 egg. Mix carefully but thoroughly.
Gently pat into shape (I made mini cakes), coat in breadcrumbs.
Saute until brown in olive oil.
Yum.
They were delicious and so easy. I am a Homemade Crab Cake convert!
This would be good with some leftover salmon too, wouldn't it?
And for dessert?

The most delicious yogurt and fruit imaginable. I mixed plain yogurt with a couple sprinkles of splenda, about a teaspoon of vanilla and frozen fruit, still frozen. (I used Dole Wildly Nutritious Berry Blend with strawberries, blackberries, blueberries and raspberries). Let it sit on the counter until fruit is defrosted and the juices are ready to mix in with the yogurt. This is so delicious! NO high fructose corn syrup in this! HA! Take that food manufacturers! I ate yogurt and fruit!

Hokey smokes, I'm coming to your house for lunch! For dinner last night I had squid bulgogi...OMG so good! A friend makes it and never overcooks the squid, last night was with papaya.... ooooh ya. And for desert? Chris (stumbling over chaos)'s flourless chocolate cake AND mel's (cabezalana) recent chocolate pie.

I had a cheese quesadilla for lunch yesterday. Simple and quick but very delicious!

I'm glad you enjoyed them, but I'm getting itchy just reading this. Yep, I'm allergic to shellfish. My lunch was left over lasagna from last night's take out. Not having to cook was wonderful cause I spent the morning and early afternoon stripping moss off my front yard. Dinner was even better - the daughter grilled chicken and zucchini, so it was not only yummy home cooking, but I didn't have to do the cooking!

Oh, MAJOR YUM! Did you know crab cake are one of my absolute favorite foods? I bet yours were the best! Look at you, walking! I didn't exercise today, and have only been to the gym once this week. But tomorrow I will get in there!

The only thing I've had today is an omelet...will likely skip lunch and have a late dinner (we have a wake tonight). The crab cakes sound heavenly!!

sad to say, i had burger king that day. the boys needed lunch, and i was too sick to cook, so i took them to burger king. i hada bacon double cheeseburger.
i havemade salmon patties though, buti use soda crackers (basic recipe is 1 can, drained & crumbled, 1 package of crackers, crushed, and 2 eggs. you can jazz this up any way you want (i've used liquid smoke, yummy!)). imay make salmon patties for lunch saturday. the boys ADORE it, and since hubbie doens't care for it, we never have it for dinner
